An assortment of high-end Wisconsin cheeses to include Pleasant
Ridge Reserve, Cranberry Cheddar,
Port Wine Cheese spread, Baby Swiss
Garnished with fresh strawberries and grapes
Marinated Olives
An assortment of fresh Olives from Spain
Leek & Morel Tartlets
Vegetarian
Duck with Red Onion Marmalade on a toasted round
Water Crackers, Flat Breads and mini-Baguette slices
DINNER
Bread Rolls with fresh-cream butter

Mesculin Greens Tossed in a Vinaigrette
DINNER ENTREES:
Pre-ordered plated meals
Entrée Braised Short
Ribs
Braised in a Red-wine sauce (not stew-like – bones removed!)

Roasted Game Hen with Herbs de Provence
Fresh herbs rub the hen which is then roasted (no pancetta in the
preparations!).
Served with a mustard sauce on the side.

Spring Vegetables in Puff Pastry
Peas, mushrooms, carrots, asparagus, etc with fresh herbs in
a light cream sauce,
served in a puff pastry shell.

You will handle the slicing and serving of the cake.
